    Prepare the Vegetables

    Preheat the oven to 425°F (220°C). Toss the broccoli, cauliflower, and sweet potatoes with 2 tablespoons of olive oil, salt, and black pepper. Spread them on a baking sheet.

    Roast the Vegetables

    Roast the vegetables in the preheated oven for about 25-30 minutes, stirring halfway through, until they are tender and slightly caramelized.

    Grill the Steak

    While the vegetables are roasting, heat a grill or grill pan over medium-high heat. Rub the ribeye steaks with the remaining 2 tablespoons of olive oil and season with salt and black pepper.

    Cook the Steak

    Grill the steaks for about 4-5 minutes per side for medium-rare, or until desired doneness. Let them rest for a few minutes before slicing.

    Prepare the Shishito Peppers

    In another pan, heat a little olive oil over medium heat. Add the shishito peppers and cook for about 5-7 minutes until blistered and tender.

    Serve

    Plate the grilled ribeye steaks with the roasted vegetables, blistered shishito peppers, and a generous drizzle of chimichurri sauce on top.
