Falafel Preparation and Assembly

    Prepare the Falafel Mix

    Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes.

    Shape the Falafel

    Once the mixture is chilled, form small balls or patties with your hands, about 1 to 2 inches in diameter.

    Cook the Falafel

    Heat olive oil in a frying pan over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

    Prepare Couscous

    In a saucepan, bring vegetable broth to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

    Prepare Cabbage Salad

    In a bowl, mix shredded cabbage, diced cucumber, and diced tomato. Toss with a drizzle of olive oil and season with salt to taste.

    On a large plate, arrange a serving of hummus, a portion of couscous, and a generous helping of the cabbage salad. Add the fried falafel and serve with pita bread and tahini sauce on the side.
