Braised Beef Melt Directions

    Prepare the Beef

    Season the chuck roast with salt and black pepper. In a large pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.

    Cook the Aromatics

    Remove the roast and set aside. In the same pot, add chopped onion and minced garlic, cooking until softened, about 3-4 minutes.

    Braised Cooking

    Return the roast to the pot, add beef broth, cover, and reduce heat to low. Let it braise for 2-3 hours, or until the beef is tender and easily shredded.

    Prepare the Toast

    Once the beef is done, preheat the oven to 350°F (175°C). Shred the beef and mix it with onion jam and herb dijonaise.

    Assemble the Melt

    On a slice of brioche, layer the shredded beef mixture, followed by slices of cooper cheese, tomato, and a handful of arugula. Top with another slice of brioche.

    Grill the Sandwich

    Heat a skillet or grill pan over medium heat. Butter the outside of the brioche slices, then grill the sandwich until golden brown and the cheese is melted, about 3-4 minutes per side.

    Serve

    Slice the sandwich in half and serve hot with extra arugula and tomato on the side if desired.
