1. Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.

2. Add Remaining Vegetables

Stir in the carrots, celery, and zucchini, cooking for an additional 5 minutes.

3. Simmer the Soup

Pour in the vegetable broth and add the diced tomatoes, salt, black pepper, and bay leaves. Bring to a boil, then reduce heat and let it simmer for 20 minutes.

4. Finish the Soup

Remove bay leaves, stir in fresh parsley, and adjust seasoning if needed before serving.
