    Prepare the Braised Mushrooms

    In a skillet over medium heat, add a touch of olive oil. Sauté the mushrooms until they are tender and browned, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

    Caramelize the Carrots

    In the same skillet, add olive oil and sliced carrots. Cook over medium-low heat, stirring occasionally, until the carrots are caramelized and soft, about 10 minutes. Season with salt and pepper, then set aside.

    Make the Whipped Tofu Ricotta

    In a food processor, combine the firm tofu, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste and set aside.

    Prepare the Gochujang Balsamic Glaze

    In a small bowl, mix together the gochujang and balsamic vinegar. Adjust the consistency with water if necessary. Set aside.

    Assemble the Salad

    In a large bowl, combine the braised mushrooms, caramelized carrots, and perilla leaves. Drizzle with goddess dressing and toss gently to combine.

    Spoon the whipped tofu ricotta on top of the salad, drizzle with gochujang balsamic glaze, and add the crunchy toppings. Serve immediately.
