    Prepare the Ingredients

    Start by prepping all the ingredients. Cut the beef short ribs into manageable pieces if necessary. Chop the carrots, daikon radish, and potatoes into large chunks. Dice the onion, mince the garlic, and grate the ginger.

    Season the Ribs

    In a large bowl, mix the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, black pepper, and a pinch of salt. Add the short ribs to this marinade and let them sit for at least 30 minutes to absorb the flavors.

    Sear the Ribs

    In a large pot or Dutch oven, heat a little oil over medium-high heat. Remove the short ribs from the marinade and sear them in the pot until they are browned on all sides. This should take about 5-7 minutes. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onions and sauté until they are translucent. Then add the carrots, daikon radish, and potatoes, stirring for about 5 minutes.

    Combine and Simmer

    Return the seared short ribs to the pot, pour in the marinade, and add the water or beef broth. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2-3 hours, or until the ribs are tender.

    Finish and Serve

    Once the ribs are tender, taste and adjust seasoning with salt if necessary. Garnish with chopped green onions before serving. Serve hot with rice or noodles.
