Key Lime Syrup (prepare first if using)

1. Make syrup

Combine 0.5 cup granulated sugar and 0.25 cup water in a small saucepan. Heat over medium, stirring until sugar dissolves and mixture is clear, about 2–3 minutes. Remove from heat and let cool slightly. Stir in 0.75 cup fresh key lime juice. Taste and adjust sweetness. Chill until ready to use. Yield: about 1 cup syrup.

2. Prepare limes

Roll each of the 4 whole limes firmly on the counter with your palm to soften and release juices. Cut each lime into 6 wedges or halve and quarter depending on preference.

3. Muddle mint and lime

In a sturdy cocktail shaker or 2-cup sturdy glass, add 20 fresh mint leaves, 2 tablespoons granulated sugar (or 1.5–2 tablespoons of the prepared key lime syrup if using), and all lime pieces. Gently muddle with a muddler or handle of a wooden spoon to release lime juice and oils from the mint. Avoid over-muddling the mint (do about 6–8 gentle presses) to prevent bitterness.

4. Add rum and ice

Pour 6 oz white rum into the shaker with the muddled lime and mint. If using key lime syrup instead of granulated sugar, add 1.5 oz (approx. 3 tbs) of syrup here and reduce or omit the sugar used in the muddle. Fill the shaker halfway with crushed ice (about 1 cup). Shake or stir vigorously for 8–10 seconds to chill and combine.

5. Build the drink

Divide the muddled mixture into 2 highball or Collins glasses (strain if you prefer less pulp). Fill each glass with additional crushed ice so the glass is nearly full (total crushed ice about 2 cups split between glasses). Top each with 4 oz club soda (8 oz total) and gently stir once to integrate. Taste and add a splash more key lime syrup or a pinch of sugar if you want it sweeter.

6. Garnish and serve

Garnish each glass with a key lime wheel or wedge and a fresh mint sprig. Clap the mint sprig between your hands once to release aromatics before placing it on the drink. Serve immediately with a straw or cocktail stirrer.
