Method
Prepare the conch

Tenderize and clean
If your conch meat is whole, rinse it under cold water and trim away any tough bits or membrane. Place the conch between two sheets of plastic wrap or in a heavy-duty resealable bag. Using a meat mallet or rolling pin, pound the conch to about 1/4-inch thickness to tenderize; this usually takes several firm, even strikes. Cut the tenderized conch into 4 sandwich-sized pieces (approximately 4–5 oz each).

Marinate briefly
Place the cut conch pieces in a shallow dish and pour 2 tablespoons lime juice over them. Rub lightly to coat and let sit at room temperature for 10 minutes — this brightens flavor and helps tenderize further. Pat pieces dry with paper towels before breading.

Make the dry mix
In a shallow bowl or plate combine 1 cup flour, 1/2 cup cornmeal, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp onion powder and 1/2 tsp paprika. Whisk to evenly distribute the leavening and seasonings.

In another shallow bowl whisk together 2 eggs and 1/2 cup milk until smooth.

Dredge the conch
Set up a breading station: dry mix, wet mix, and the dry mix again (double-dip). Coat each conch piece first in the dry mix, shaking off excess, then dip into the egg-milk mixture, then back into the dry mix pressing lightly so a good crust adheres. Place breaded pieces on a plate while you heat the oil.

Fry until golden
Pour about 1 cup vegetable oil into a heavy skillet (cast-iron or stainless) to create a 1/4–1/2-inch depth. Heat over medium-high until oil reaches 350°F (or a wooden spoon handle bubble test: small steady bubbles around the handle). Carefully add 1–2 pieces (do not crowd) and fry 2–3 minutes per side until golden brown and crusty. Transfer to a wire rack or paper towel-lined plate and rest 2–3 minutes. Repeat with remaining pieces. If pieces are thicker, fry an additional 1–2 minutes per side and lower heat slightly to finish through without burning crust.

Finish seasoning
While hot, season both sides lightly with a pinch of salt and a grind of black pepper. Keep warm in a low oven (200°F / 95°C) on the rack if making multiple sandwiches.
Make the conch sauce

In a small bowl combine 1/2 cup mayonnaise, 1 tsp Dijon mustard, 1 tsp ketchup, 1/2 tsp Worcestershire sauce, 1/2 tsp hot sauce, 1 tsp fresh lime juice, 1 tsp minced capers, 1 tbs chopped parsley, 1/4 tsp salt and 1/4 tsp black pepper. Stir until smooth and taste — adjust hot sauce, lime, or salt as needed. Refrigerate for at least 10 minutes to allow flavors to meld.
Assemble the sandwiches

Prepare the buns: if desired, lightly toast the split sides of the 4 rolls in a dry skillet or under a broiler until golden (about 1–2 minutes). This adds texture and helps prevent sogginess.

Slice the tomato into 4 thin rounds and have lettuce leaves and sliced red onion ready.

Spread about 1 to 1 1/2 tablespoons of the conch sauce on both cut sides of each bun. Place a lettuce leaf on the bottom half, then a piece of fried conch. Top the conch with a tomato slice, a few rings of red onion, and pickled pepper slices if using. Finish with the top bun and press lightly.

Serve each sandwich immediately with a lime wedge on the side for squeezing over the conch. Optionally serve with fries, slaw, or a simple salad.
Notes and tips

If you have frozen conch, fully thaw in the refrigerator and pat very dry. Over-tenderizing can make the texture mushy — pound to about 1/4-inch thickness. For a lighter sandwich, swap the cornmeal for panko breadcrumbs. Adjust seasoning of the breading to taste; cayenne can be added for more heat.
