If your conch meat is whole, rinse it under cold water and trim away any tough bits or membrane. Place the conch between two sheets of plastic wrap or in a heavy-duty resealable bag. Using a meat mallet or rolling pin, pound the conch to about 1/4-inch thickness to tenderize; this usually takes several firm, even strikes. Cut the tenderized conch into 4 sandwich-sized pieces (approximately 4–5 oz each).

Tenderize and clean

Place the cut conch pieces in a shallow dish and pour 2 tablespoons lime juice over them. Rub lightly to coat and let sit at room temperature for 10 minutes — this brightens flavor and helps tenderize further. Pat pieces dry with paper towels before breading.

Marinate briefly

In a shallow bowl or plate combine 1 cup flour, 1/2 cup cornmeal, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp onion powder and 1/2 tsp paprika. Whisk to evenly distribute the leavening and seasonings.

Make the dry mix

In another shallow bowl whisk together 2 eggs and 1/2 cup milk until smooth.

Make the wet mix

Set up a breading station: dry mix, wet mix, and the dry mix again (double-dip). Coat each conch piece first in the dry mix, shaking off excess, then dip into the egg-milk mixture, then back into the dry mix pressing lightly so a good crust adheres. Place breaded pieces on a plate while you heat the oil.

Dredge the conch

Pour about 1 cup vegetable oil into a heavy skillet (cast-iron or stainless) to create a 1/4–1/2-inch depth. Heat over medium-high until oil reaches 350°F (or a wooden spoon handle bubble test: small steady bubbles around the handle). Carefully add 1–2 pieces (do not crowd) and fry 2–3 minutes per side until golden brown and crusty. Transfer to a wire rack or paper towel-lined plate and rest 2–3 minutes. Repeat with remaining pieces. If pieces are thicker, fry an additional 1–2 minutes per side and lower heat slightly to finish through without burning crust.

Fry until golden

While hot, season both sides lightly with a pinch of salt and a grind of black pepper. Keep warm in a low oven (200°F / 95°C) on the rack if making multiple sandwiches.

Finish seasoning

In a small bowl combine 1/2 cup mayonnaise, 1 tsp Dijon mustard, 1 tsp ketchup, 1/2 tsp Worcestershire sauce, 1/2 tsp hot sauce, 1 tsp fresh lime juice, 1 tsp minced capers, 1 tbs chopped parsley, 1/4 tsp salt and 1/4 tsp black pepper. Stir until smooth and taste — adjust hot sauce, lime, or salt as needed. Refrigerate for at least 10 minutes to allow flavors to meld.

Prepare the buns: if desired, lightly toast the split sides of the 4 rolls in a dry skillet or under a broiler until golden (about 1–2 minutes). This adds texture and helps prevent sogginess.

Slice the tomato into 4 thin rounds and have lettuce leaves and sliced red onion ready.

Spread about 1 to 1 1/2 tablespoons of the conch sauce on both cut sides of each bun. Place a lettuce leaf on the bottom half, then a piece of fried conch. Top the conch with a tomato slice, a few rings of red onion, and pickled pepper slices if using. Finish with the top bun and press lightly.

Serve each sandwich immediately with a lime wedge on the side for squeezing over the conch. Optionally serve with fries, slaw, or a simple salad.

If you have frozen conch, fully thaw in the refrigerator and pat very dry. Over-tenderizing can make the texture mushy — pound to about 1/4-inch thickness. For a lighter sandwich, swap the cornmeal for panko breadcrumbs. Adjust seasoning of the breading to taste; cayenne can be added for more heat.

Combine 0.5 cup granulated sugar and 0.25 cup water in a small saucepan. Heat over medium, stirring until sugar dissolves and mixture is clear, about 2–3 minutes. Remove from heat and let cool slightly. Stir in 0.75 cup fresh key lime juice. Taste and adjust sweetness. Chill until ready to use. Yield: about 1 cup syrup.

Roll each of the 4 whole limes firmly on the counter with your palm to soften and release juices. Cut each lime into 6 wedges or halve and quarter depending on preference.

In a sturdy cocktail shaker or 2-cup sturdy glass, add 20 fresh mint leaves, 2 tablespoons granulated sugar (or 1.5–2 tablespoons of the prepared key lime syrup if using), and all lime pieces. Gently muddle with a muddler or handle of a wooden spoon to release lime juice and oils from the mint. Avoid over-muddling the mint (do about 6–8 gentle presses) to prevent bitterness.

Muddle mint and lime

Pour 6 oz white rum into the shaker with the muddled lime and mint. If using key lime syrup instead of granulated sugar, add 1.5 oz (approx. 3 tbs) of syrup here and reduce or omit the sugar used in the muddle. Fill the shaker halfway with crushed ice (about 1 cup). Shake or stir vigorously for 8–10 seconds to chill and combine.

Add rum and ice

Divide the muddled mixture into 2 highball or Collins glasses (strain if you prefer less pulp). Fill each glass with additional crushed ice so the glass is nearly full (total crushed ice about 2 cups split between glasses). Top each with 4 oz club soda (8 oz total) and gently stir once to integrate. Taste and add a splash more key lime syrup or a pinch of sugar if you want it sweeter.

Build the drink

Garnish each glass with a key lime wheel or wedge and a fresh mint sprig. Clap the mint sprig between your hands once to release aromatics before placing it on the drink. Serve immediately with a straw or cocktail stirrer.

If using whole conch, tenderize by pounding thinly between plastic wrap or slice thinly against the grain. Dice into bite-size pieces. In a large pot, combine the stock, white wine (if using), bay leaves, thyme sprigs, and peppercorns. Bring to a gentle simmer over medium heat. Add the diced conch, reduce heat to low, and gently poach until just tender, about 20–30 minutes depending on thickness. Remove conch with a slotted spoon and set aside. Strain the broth through a fine-mesh sieve into a bowl, discard solids, and return strained broth to the pot. Taste broth and adjust seasoning lightly — it should be flavorful but not overly salty since more seasoning will be added later.

Tenderize and Simmer Conch

In a separate heavy-bottomed pot or Dutch oven, melt the butter with the olive oil over medium heat. Add the diced onion, celery, and green bell pepper. Cook, stirring occasionally, until vegetables are softened and translucent, about 6–8 minutes. Stir in the minced garlic and cook until fragrant, about 30 seconds.

Add the diced tomatoes and diced potatoes to the aromatics. Cook, stirring, for 2–3 minutes to combine flavors.

Sprinkle the flour over the softened vegetables and stir to coat. Cook the flour for 1–2 minutes, stirring constantly, to remove the raw flour taste. Slowly whisk in about 1 cup of the warm strained conch broth to form a smooth slurry, then gradually whisk in the remaining broth until fully combined and smooth.

Make a Roux

Bring the chowder to a gentle simmer and cook until the potatoes are tender when pierced with a fork, about 12–15 minutes. Stir occasionally to prevent sticking.

Lower the heat to medium-low. Stir in the milk and heavy cream. Add the crushed dry thyme, smoked paprika, hot sauce (if using), salt, and freshly ground black pepper. Taste and adjust seasoning. If the chowder is too thick, add a little more stock or milk to reach desired consistency.

Finish with Dairy and Seasoning

Add the reserved tender conch to the pot and warm through over low heat for 3–5 minutes — do not boil vigorously, which can toughen the conch. Remove and discard the bay leaves and thyme sprigs if still present.

Return Conch to Chowder

Ladle the chowder into warmed bowls. Sprinkle chopped parsley and sliced chives over each bowl. Serve with lime wedges to squeeze over the chowder for brightness and crusty bread or crackers on the side. Serve immediately.

Pat the grouper cheeks dry with paper towels. Season both sides evenly with 1 tsp kosher salt and 1 tsp freshly ground black pepper. Lightly dust each cheek in 1/2 cup all-purpose flour, shaking off excess.

Prepare cheeks

Heat a large skillet over medium-high heat. Add 2 tbsp neutral oil and 1 tbsp unsalted butter. When the butter foam subsides and the pan is hot (but not smoking), add the cheeks in a single layer without crowding. Sear for 2 to 3 minutes per side until a golden crust forms and the interior reaches opaque and flakes easily (internal temperature about 135–140°F / 57–60°C). Transfer the cooked cheeks to a warm plate and tent with foil while you make the sauce.

Pan-sear

Using the same skillet and the brown bits left behind, reduce heat to medium and add 1 tbsp extra-virgin olive oil. Add the finely minced shallot and sauté for 1 to 2 minutes until softened and translucent. Add 1 minced garlic clove and cook 30 seconds until fragrant, taking care not to brown the garlic.

Pour in 1/4 cup dry white wine to deglaze the pan, scraping up browned bits with a wooden spoon. Allow the wine to reduce by about half, about 2 to 3 minutes.

Lower heat to medium-low. Stir in 2 tbsp fresh lemon juice and 1 tbsp orange juice. Whisk in 2 tbsp heavy cream. Gradually swirl in the remaining 3 tbsp unsalted butter, one tablespoon at a time, allowing each to melt and emulsify into the sauce. Stir in 1 tbsp drained capers and 2 tbsp chopped fresh parsley. Season the sauce to taste with 1/2 tsp salt and 1/4 tsp black pepper. Warm gently but do not boil; the sauce should be glossy and slightly thickened.

Finish sauce

Return the seared grouper cheeks and any accumulated juices to the skillet and spoon the sauce over them for 30 to 60 seconds to reheat and coat. Remove from heat.

Coat cheeks

Plate the grouper cheeks (2 to 3 cheeks per serving) and spoon additional citrus-butter sauce over each portion. Garnish each plate with a lemon wedge and microgreens or a parsley sprig. Serve immediately.

Pat the hogfish fillets dry with paper towels. Trim any ragged edges and check for remaining pin bones; remove with fish tweezers if needed. Leave the skin on to help hold the fillet together while grilling.

Prepare fish

In a shallow dish or bowl, whisk together the extra-virgin olive oil, fresh lemon juice, minced garlic, chopped thyme, sea salt, and black pepper until combined.

Make marinade

Place the fillets skin-side down in the dish and spoon or brush the marinade over the flesh side. Turn the fillets once so both sides are lightly coated. Marinate at room temperature for 15–20 minutes (no longer than 30 minutes) to avoid 'cooking' the fish with acid.

Preheat a gas or charcoal grill to medium-high heat (about 400–450°F / 200–230°C). Clean the grates thoroughly and oil them: dip a folded paper towel in neutral oil and, using tongs, rub it over the hot grates to prevent sticking.

In a small heatproof bowl, melt the unsalted butter (in microwave for 20–30 seconds or in a small saucepan). Stir in the chopped parsley and set aside.

Brush the oiled grill grates and place the hogfish fillets skin-side down. Grill with the lid closed (if possible) for 3–4 minutes without moving them to get a good sear. Using a thin flexible spatula, gently lift one corner; if the skin releases easily and has nice grill marks, flip the fillets. Grill flesh-side down for an additional 2–3 minutes until the fish is opaque and flakes easily with a fork. Total cooking time will be about 5–7 minutes depending on thickness (internal temperature 135–140°F / 57–60°C for medium).

Grill the fillets

If the skin seems likely to stick, grill skin-side down for a longer initial period (4–5 minutes) and only flip once. If flare-ups occur, move fillets to a cooler area of the grill until flames subside.

Transfer the grilled hogfish to a warmed platter skin-side up. Spoon the melted parsley butter over the hot fillets. Serve immediately with lemon wedges. Scatter capers and microgreens or arugula over or alongside the fish if using.

Pour 0.25 oz absinthe into a chilled coupe or Nick & Nora glass, swirl to coat the inside, then discard excess or pour out, leaving a light aromatic film. Set the glass aside inverted to drain any droplets.

Prep absinthe rinse

If you don't have honey syrup ready, combine equal parts honey and hot water (for this recipe, 0.5 oz honey + 0.5 oz hot water) and stir until fully combined. Cool slightly before using.

Peel (optional) and roughly chop about half a cucumber. Muddle or pulse in a blender and strain through a fine mesh sieve or cheesecloth to yield 0.75 oz cucumber juice. Gently slap 6 mint leaves between your palms to release oils.

Prepare cucumber juice & mint

In a cocktail shaker, add the gin (2 oz), fresh lime juice (0.75 oz), fresh lemon juice (0.25 oz), honey syrup (0.5 oz), cucumber juice (0.75 oz), Green Chartreuse (0.5 oz), the slapped mint leaves, and 2 dashes of Angostura bitters. Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

Shake

Shake for a couple seconds longer if the mint is coarse. Double-strain the cocktail through a fine mesh strainer into the absinthe-rinsed chilled coupe to remove ice shards and mint bits, producing a smooth, clear finish.

Thread a cucumber ribbon into a twist or lay it along the rim and float a mint sprig if desired. Optionally add a tiny finishing drop of absinthe on top for extra perfume. Serve immediately.
