1. Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add the Adluh stone ground grits and salt. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes until thickened. Once done, stir in 1 tablespoon of butter and keep warm.

2. Cook the Scallops

Pat the scallops dry with paper towels. Season both sides with the blackening seasoning, salt, and pepper. In a large skillet over medium-high heat, add 1 tablespoon of butter. Once hot, add the scallops, ensuring they are not overcrowded. Sear for about 2-3 minutes on each side until blackened and cooked through. Remove from the skillet and set aside.

3. Prepare the Creamed Corn

In the same skillet, add the creamed corn and heat until warmed through. Stir occasionally and season with salt and pepper to taste.

4. Assemble the Dish

To serve, spoon a portion of grits onto each plate, top with creamed corn, and arrange the blackened scallops on top. Garnish with crispy pork and sliced scallions.
