    Prepare the Pineapple

    Cut the fresh pineapple into quarters and remove the core. Chop the pineapple flesh into small pieces.

    Blend the Pineapple

    Place the chopped pineapple pieces into a blender and add 2 cups of water. Blend until smooth.

    Strain the Mixture

    Using a fine mesh strainer or cheesecloth, strain the blended pineapple mixture into a large bowl or pitcher, discarding the pulp.

Fermentation

    In the strained pineapple juice, add the remaining 2 cups of water, sugar, lemon juice, and yeast. Stir well until the sugar is dissolved.
