Prepare the Pork Belly
Preheat your oven to 150°C (300°F). Score the skin of the pork belly in a criss-cross pattern, being careful not to cut into the meat. Rub the pork belly all over with salt, black pepper, garlic powder, paprika, and chili powder.

Bake the Pork Belly
Place the pork belly on a baking tray, skin side up. Bake in the preheated oven for about 2 hours until tender.

Crisp the Skin
Increase the oven temperature to 220°C (430°F) and bake for an additional 20-30 minutes, or until the skin is crispy and golden brown.

Make the Dipping Sauce
In a small bowl, mix together honey, soy sauce, Sriracha, and rice vinegar. Adjust the spice level by adding more Sriracha if desired.

Serve
Remove the pork belly from the oven and let it rest for 10 minutes. Cut into bite-sized pieces and serve with the spicy dipping sauce.
