Directions

  1. 1

    Prepare the Oven and Ramekins

Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust them with cocoa powder.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and butter. Melt in the microwave in 30-second intervals, stirring in between, until smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, adding the vanilla extract. Stir until well combined.

  5. 5

    Add Dry Ingredients

Sift the flour, cocoa powder, and salt into the chocolate mixture. Gently fold to combine, being careful not to overmix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is soft.

  8. 8

    Cool and Serve

Let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate and serve immediately, optionally with ice cream or whipped cream.
