Method

Preparation

  1. 1

    Clean the Mussels

Rinse the fresh mussels under cold water. Scrub the shells with a brush to remove any dirt or barnacles. Remove the beards (the fibrous strands) by pulling them away from the shell.

  2. 2

    Prep the Aromatics

Mince the garlic cloves and finely chop the shallot. Set aside.

  3. 3

    Chop the Parsley

Roughly chop the fresh parsley and set aside for garnish.

Cooking

  1. 4

    Sauté Aromatics

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing for about 2-3 minutes until they become fragrant and translucent.

  2. 5

    Add Liquids

Pour in the dry white wine and chicken broth. Bring the mixture to a simmer.

  3. 6

    Cook the Mussels

Add the cleaned mussels to the pot. Cover with a lid and cook for about 5-7 minutes, or until the mussels open. Discard any mussels that remain closed.

  4. 7

    Season the Sauce

Once the mussels are cooked, season with salt and black pepper to taste. Stir in the chopped parsley.

Serving

  1. 8

    Plate and Serve

Transfer the cooked mussels to a serving dish, spooning the garlic and wine sauce over them. Garnish with additional parsley if desired. Serve hot with crusty bread or over pasta.
