Preparing the Haddock

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until you achieve a smooth batter.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Haddock
Dip each haddock fillet into the batter, ensuring it is completely coated.

Fry the Haddock
Carefully place the battered haddock fillets into the hot oil, cooking for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Chop the Vegetables
Dice the cucumber, tomatoes, and thinly slice the red onion. Place them into a large salad bowl.

Add the Olives and Feta
Add the Kalamata olives and crumbled feta cheese to the bowl with the chopped vegetables.

Dress the Salad
In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.
