Halibut Preparation

Season the Halibut
Sprinkle the Alaskan halibut fillets with salt and black pepper on both sides. Let them sit for about 10 minutes to absorb the flavors.

Make the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and cayenne pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick. Let it rest for about 15 minutes.

Prepare the Shrimp
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp, season with salt and black pepper to taste, and drizzle with lemon juice. Cook for 3-4 minutes until the shrimp turn pink and are cooked through. Remove from heat and set aside.
Fry Halibut and Serve

Fry the Halibut
Heat oil in a deep fryer or a large pot to 350°F (175°C). Dip each seasoned halibut fillet into the batter, allowing excess batter to drip off, then carefully lower it into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
