Prepare the Mushrooms

    Clean the Mushrooms

    Gently clean the fresh mushrooms with a damp cloth to remove any dirt. Avoid washing them under running water as they can absorb moisture, which may affect the batter's adherence.

    Slice the Mushrooms

    Slice the mushrooms into even pieces, about 1/4 inch thick. This will ensure that they cook evenly during frying.

Prepare the Batter

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until well combined.

    Add Cold Water

    Gradually add the cold water to the dry mixture, whisking continuously until you achieve a smooth and thick batter without lumps.

Fry the Mushrooms

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Batter the Mushrooms

    Dip each mushroom slice into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

    Fry the Mushrooms

    Carefully place the battered mushrooms into the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes. Turn them halfway through for even cooking.
