Preparation of Halibut Fish Crispies

    Prepare the Halibut

    Rinse the halibut fillets under cold water and pat them dry with paper towels. Cut the fillets into bite-sized pieces.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and has no lumps.

    Heat the Oil

    In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Fish

    Dip each piece of halibut into the batter, ensuring they are well-coated.

    Fry the Fish

    Carefully place the battered halibut pieces into the hot oil, frying them in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

    Peel the russet potatoes and cut them into thin strips for fries.

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    In another large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry. Carefully add the fries to the hot oil in batches. Fry them for about 5-7 minutes or until golden and crispy. Remove with a slotted spoon and place on a paper towel-lined plate. Season with salt to taste.
