Method
Halibut Burger Preparation

Prepare the Halibut
Remove the skin from the halibut fillets and chop them into small pieces. Place the chopped halibut into a food processor.

Mix Ingredients
Add breadcrumbs, egg, chopped parsley, lemon zest, salt, and black pepper to the food processor. Pulse until just combined, being careful not to over-process.

Form Patties
Shape the mixture into burger patties, about 1.5 inches thick. Refrigerate for 30 minutes to help them hold their shape.

Prepare Batter
In a bowl, mix flour and water until you achieve a smooth batter consistency.

Heat Oil
In a deep frying pan, heat vegetable oil over medium-high heat, ensuring there is enough oil to submerge the patties.

Fry Patties
Dip each patty into the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through.

Drain
Once cooked, remove the patties from the oil and drain on paper towels.
French Fries Preparation

Cut Potatoes
Wash and peel the potatoes. Cut them into thick strips, about 1 cm wide.

Soak Potatoes
Soak the cut potatoes in cold water for 30 minutes to remove excess starch, then drain and pat dry.

Heat Oil for Frying
In a separate pot or deep fryer, heat vegetable oil to 180°C (350°F).

Fry Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry for about 5-7 minutes until golden and crispy, then remove and drain on paper towels.

Season Fries
Sprinkle salt over the fries while they are still hot to enhance the flavor.
