    Prepare the Halibut

    Cut the fresh halibut fillets into bite-sized pieces, approximately 1 to 2 inches in size. Season the pieces with salt and black pepper. Let them sit for about 10 minutes to allow the flavors to absorb.

Batter Preparation

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and has no lumps. The consistency should be thick enough to coat the back of a spoon.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into the oil; if it sizzles and rises to the surface, it’s ready.

    Fry the Halibut Bites

    Dip each piece of seasoned halibut into the batter, allowing any excess to drip off. Carefully place a few pieces into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy, flipping halfway through for even cooking. Remove with a slotted spoon and drain on paper towels.

    Serve the hot halibut bites immediately with your favorite dipping sauce, such as tartar sauce or a spicy aioli.
