Method

Preparing the Chips

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick slices or wedges, about 1/4 to 1/2 inch thick.

    Soak the Potatoes

    Place the cut potatoes into a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Chips

    In batches, carefully add the dried potato wedges to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Preparing the Halibut

    In a large bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water while whisking until you achieve a smooth batter consistency.

    Dredge each halibut fillet in the batter until fully coated.

    Fry the Halibut

    Carefully place the battered halibut fillets in the hot oil. Fry for about 4-6 minutes, turning once, until golden brown and cooked through. Remove and drain on paper towels.
