Preparing the Chips

Cutting the Potatoes
Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

Soaking the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Drying the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel.

Frying the Chips
In a deep pot, heat 4 cups of vegetable oil over medium-high heat. Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Gradually whisk in 1 cup of cold sparkling water until the batter is smooth.

Coating the Fish
Dip each hake fillet into the batter, allowing excess to drip off.

Frying the Fish
In the same pot used for the chips, heat the oil to 350°F (175°C). Fry the battered hake fillets in batches until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Serve the crispy fish alongside the hot chips. Garnish with lemon wedges and a side of tartar sauce for dipping.
