For the Haddock

Method

Preparing the Batter

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well blended.

  2. 2

    Add Sparkling Water

Gradually add the cold sparkling water to the dry mixture while whisking continuously to create a smooth batter. The batter should be thick enough to coat the back of a spoon.

Preparing the Haddock

  1. 3

    Heat Oil

In a large skillet or deep fryer, heat the olive oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Coat Haddock

Dip each haddock fillet into the batter, ensuring it is fully coated.

  3. 5

    Fry the Haddock

Carefully place the battered haddock fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Preparing the Greek Sauce

  1. 6

    Mix Sauce Ingredients

In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper. Mix until well combined.

Serving

  1. 7

    Plate the Dish

Serve the crispy haddock fillets hot, accompanied by a generous dollop of the Greek sauce on the side.
