Preparing the Batter

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well blended.

Add Sparkling Water
Gradually add the cold sparkling water to the dry mixture while whisking continuously to create a smooth batter. The batter should be thick enough to coat the back of a spoon.
Preparing the Haddock

Heat Oil
In a large skillet or deep fryer, heat the olive oil over medium-high heat until it reaches 350°F (175°C).

Coat Haddock
Dip each haddock fillet into the batter, ensuring it is fully coated.

Fry the Haddock
Carefully place the battered haddock fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
