Preparation of Fries
1. Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide.
2. Soak the Potatoes
Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
3. Heat the Oil for Fries
In a deep fryer or a large, heavy pot, heat 4 cups of vegetable oil to 350°F (175°C).
4. Fry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels. Fry them in batches for about 5-7 minutes until they are golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt.

5. Make the Batter
In a large bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Gradually whisk in 1 cup of cold sparkling water until the batter is smooth.
6. Heat the Oil for Fish
In a separate deep fryer or the same pot used for fries, heat the vegetable oil to 350°F (175°C).
7. Coat the Haddock
Dip each haddock fillet into the batter, making sure it is fully coated.
8. Fry the Fish
Carefully place the battered haddock fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Serving
9. Plate the Dish
Serve the golden fried haddock alongside the crispy french fries. Optionally, garnish with lemon wedges and tartar sauce.
