Marinade Preparation

    Make the Marinade

    In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well combined.

    Marinate the Chicken

    Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4 hours or overnight for deeper flavor.

Grilling and Rice Preparation

    Grill the Chicken

    Preheat your grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

    Cook the Rice

    While the chicken is marinating, rinse the long-grain rice under cold water until the water runs clear. In a saucepan, bring 4 cups of water to a boil. Add the rinsed rice and salt. Cover and reduce the heat to low. Cook for about 18-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork before serving.
