Prepare the Chipotle Sauce
In a small bowl, combine mayonnaise, chipotle peppers, lime juice, minced garlic, and salt. Mix well until smooth. Set aside.

Prepare the Fish Batter
In a large mixing bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually add cold water while whisking until a smooth batter forms.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, then carefully place it into the hot oil. Fry in batches until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Assemble the Tacos
Warm the soft tortillas in a dry skillet or microwave. Place a few pieces of crispy fish on each tortilla, top with shredded cabbage, chopped cilantro, and a drizzle of chipotle sauce. Serve with lime wedges on the side.
