2. Sauté Vegetables
In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic, and sauté until they are translucent, about 5 minutes.
3. Add Potatoes and Broth
Add the diced potatoes to the pot and stir well. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes or until the potatoes are tender.
4. Add Halibut
Once the potatoes are tender, add the halibut pieces to the pot. Stir gently to combine, and let it cook for an additional 5 minutes, or until the fish is cooked through.
5. Finish with Cream and Seasonings
Pour in the heavy cream, and add salt, black pepper, thyme, and dill. Stir well to combine, and let the chowder simmer for another 5 minutes to heat through.
Serving
6. Garnish and Serve
Ladle the chowder into bowls. Sprinkle with grated Parmesan cheese and chopped fresh parsley before serving.
