Method

Preparation of Sweet Potato Fries

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Sweet Potatoes

Wash and peel the sweet potatoes. Cut them into thin fries, about 1/4 inch thick.

  3. 3

    Season Sweet Potatoes

In a large bowl, toss the sweet potato fries with olive oil, salt, black pepper, garlic powder, paprika, and cayenne pepper (if using) until they are evenly coated.

  4. 4

    Bake Sweet Potatoes

Spread the seasoned fries on a baking sheet lined with parchment paper in a single layer. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are crisp and golden brown.

Preparation of Fish

  1. 5

    Prepare Fish

While the fries are baking, rinse the fish fillets under cold water and pat them dry with paper towels.

  2. 6

    Season Fish

In a small bowl, mix together the olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Brush this mixture over both sides of the fish fillets.

  3. 7

    Cook Fish

In the last 10 minutes of the fries baking, heat a non-stick skillet over medium-high heat. Cook the fish fillets for about 3-4 minutes on each side, or until they are cooked through and flake easily with a fork.

  4. 8

    Serve

Remove the fries from the oven and serve alongside the cooked fish. Garnish the fish with fresh parsley if desired.
