Preheat your oven to 425°F (220°C).

Prepare Sweet Potatoes
Wash and peel the sweet potatoes. Cut them into thin fries, about 1/4 inch thick.

In a large bowl, toss the sweet potato fries with olive oil, salt, black pepper, garlic powder, paprika, and cayenne pepper (if using) until they are evenly coated.

Spread the seasoned fries on a baking sheet lined with parchment paper in a single layer. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are crisp and golden brown.

While the fries are baking, rinse the fish fillets under cold water and pat them dry with paper towels.
