Method

Preparing the Cod

  1. 1

    Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until you achieve a smooth batter consistency.

  2. 2

    Heat the Oil

In a large, deep saucepan or fryer, heat 4 cups of vegetable oil to 350°F (175°C).

  3. 3

    Batter the Cod

Dip each piece of king cod fillet into the batter, ensuring it is fully coated.

  4. 4

    Fry the Cod

Carefully place the battered cod fillets into the hot oil, frying them in batches for 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Preparing the French Fries

  1. 5

    Cut the Potatoes

Peel the russet potatoes and cut them into thick fries, about 1/4 inch thick.

  2. 6

    Soak the Fries

Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.

  3. 7

    Dry the Fries

Drain the fries and pat them dry with a clean kitchen towel.

  4. 8

    Fry the Fries

In a large saucepan or fryer, heat 4 cups of vegetable oil to 350°F (175°C). Fry the potatoes in batches for 5-7 minutes, or until they are golden and crispy. Remove and drain on paper towels, then season with salt.
