Preparing the Cod

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until you achieve a smooth batter consistency.

Heat the Oil
In a large, deep saucepan or fryer, heat 4 cups of vegetable oil to 350°F (175°C).

Batter the Cod
Dip each piece of king cod fillet into the batter, ensuring it is fully coated.

Fry the Cod
Carefully place the battered cod fillets into the hot oil, frying them in batches for 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Cut the Potatoes
Peel the russet potatoes and cut them into thick fries, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.
