Prepare the Chips

Cut the Potatoes
Peel the potatoes and cut them into thick fries, about 1/2 inch wide.

Soak the Potatoes
Place the cut fries in cold water and soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the water and pat the fries dry with a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat 4 cups of vegetable oil to 325°F (160°C).

Fry the Chips
Fry the potatoes in batches for about 5-6 minutes until they are pale and slightly soft but not browned. Remove and drain on paper towels.

Increase the oil temperature to 375°F (190°C) for a second fry.

Fry the chips again in batches for another 3-4 minutes until golden brown and crispy. Drain on paper towels and season with salt.

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water until you achieve a smooth batter.

In a separate large pot, heat 4 cups of vegetable oil to 350°F (175°C) for frying the fish.

Dip each cod fillet into the batter, ensuring it is fully coated.

Carefully place the battered cod fillets in the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
