Crust Preparation

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until golden. Remove from oven and let it cool.

    Make the filling

    In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the granulated sugar and continue to beat until combined.

    Add remaining ingredients

    Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Finally, fold in the all-purpose flour until just combined.

    Pour into crust

    Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Baking

    Bake the cheesecake

    Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

    Cool and chill

    Remove the cheesecake from the oven and let it cool to room temperature. Once cool, refrigerate for at least 4 hours or overnight before serving.

    If desired, top the cheesecake with fresh berries and a dusting of powdered sugar before slicing and serving.
