Calamari Preparation

Clean the Calamari
Rinse the fresh calamari tubes under cold water and pat them dry with paper towels. Cut the tubes into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to evenly distribute the dry ingredients.

Coat the Calamari
Dip the calamari rings into the wet mixture, allowing excess to drip off. Then, coat them in the flour mixture, pressing gently to adhere.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari in batches for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens slightly and flavors meld together.

Serve
Serve the crispy calamari hot with the marinara sauce on the side for dipping.
