Method

Preparation

  1. 1

    Prepare the Scallops

Rinse the bay scallops under cold water and pat them dry with a paper towel. Set aside.

  2. 2

    Prepare the Breading

In a shallow bowl, combine flour, breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix well to combine.

  3. 3

    Prepare the Wet Mixture

In another bowl, whisk together the egg and milk until well combined.

Breading

  1. 4

    Coat the Scallops

Dip each scallop first into the wet mixture, allowing excess to drip off, then coat it in the breading mixture. Make sure each scallop is evenly coated.

Cooking

  1. 5

    Heat the Oil

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  2. 6

    Cook the Scallops

Once the oil is hot, carefully add the breaded scallops in a single layer. Cook for 2-3 minutes on each side or until golden brown and crispy.

  3. 7

    Drain and Serve

Remove the cooked scallops from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately.
