Preparing the Battered Shrimp

Prepare the Shrimp
Rinse the peeled and deveined shrimp under cold water and pat them dry with paper towels. This will help the batter adhere better.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until well combined.

Add Sparkling Water
Gradually add the cold sparkling water to the dry ingredients, stirring gently until the batter is smooth and has no lumps. The batter should be thick enough to coat the shrimp.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the top, it’s ready.

Batter the Shrimp
Dip each shrimp into the batter, making sure it’s fully coated. Allow any excess batter to drip off.

Fry the Shrimp
Carefully place the battered shrimp into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and cooked through.

Drain and Serve
Once cooked, remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
