Cooking Instructions

  1. 1

    Cook the Orzo

In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

  2. 2

    Prepare the Salmon

In a bowl, mix paprika, cumin, garlic powder, salt, and black pepper. Rub the spice mixture onto the salmon fillets. Heat olive oil in a skillet over medium-high heat and add the salmon. Cook for about 3-4 minutes on each side or until the salmon is cooked through and has a blackened crust. Remove from heat and let it rest.

  3. 3

    Prepare the Vegetables

Dice the red and yellow bell peppers. If using fresh corn, cut the kernels off the cob. If using canned corn, drain it.

  4. 4

    Combine Ingredients

In a large bowl, combine the cooled orzo, diced bell peppers, corn, and lime juice. Toss to mix well.

  5. 5

    Assemble the Bowl

Divide the orzo mixture into serving bowls. Top with sliced blackened salmon, sliced avocado, and cilantro if desired. Drizzle with additional lime juice if preferred.
