If using homemade red chile sauce, prepare it first. If using store-bought, heat it in a saucepan until warm.

Heat the Tortillas
In a skillet over medium heat, warm the blue corn tortillas for about 30 seconds on each side until pliable.

Dip the Tortillas
Once the tortillas are warm, dip each tortilla into the red chile sauce, ensuring both sides are coated.

Layer the Enchiladas
Stack the dipped tortillas on a plate, then sprinkle with chopped onions and Asadero cheese in between each tortilla.

Serve the enchiladas pancake style, with any remaining chile sauce drizzled on top. Optionally, add grilled arrachera steak on the side or on top.
