Prepare the Chorizo
In a skillet, heat the olive oil over medium heat. Add the chorizo and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

Melt the Cheese
Lower the heat and add the Chihuahua and Monterey Jack cheeses to the skillet with the chorizo. Stir continuously until the cheese is fully melted and creamy.

Add Jalapeños and Cilantro
Finely chop the jalapeño (remove seeds for less heat if desired) and add it to the cheese mixture along with the chopped cilantro. Stir to combine.

Serve
Transfer the melted cheese mixture to a serving dish. Serve immediately with warm flour tortillas for dipping.
