Pecan Crusted Atlantic Salmon Recipe

    Prepare the Salmon

    Preheat your oven to 375°F (190°C). In a bowl, mix the chopped pecans, breadcrumbs, parsley, olive oil, salt, and black pepper until well combined.

    Crust the Salmon

    Place the salmon fillets on a baking sheet lined with parchment paper. Spread the pecan mixture evenly over the top of each fillet, pressing down gently to adhere.

    Bake the Salmon

    Bake the salmon in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and the crust is golden brown.

    Sauté the Brussels Sprouts

    While the salmon is baking, heat a large skillet over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pan.

    Combine Ingredients

    In the same skillet, add the halved brussels sprouts and minced garlic to the bacon drippings. Sauté for about 8-10 minutes until the brussels sprouts are tender and slightly caramelized. Add the cooked bacon back to the skillet and stir in the lemon juice.

    Place a generous serving of the brussels sprout bacon medley on each plate and top with the pecan crusted salmon. Enjoy your meal!
