Prepare the Avocado
Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork and season with salt and pepper to taste.

Assemble the Sandwich
Spread butter on one side of each slice of sourdough bread. On the non-buttered side of two slices, layer brie cheese, a generous spoonful of maple bacon jam, and mashed avocado. Top with the other two slices of bread, buttered side facing out.

Grill the Sandwich
Heat a skillet over medium heat. Place the assembled sandwiches in the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Serve
Remove the sandwiches from the skillet, slice in half if desired, and serve immediately with kettle chips or fries.
