Cook the Orzo
In a pot, bring water to a boil. Add salt and orzo. Cook according to package instructions until al dente, about 8-10 minutes.

Prepare the Vegetables
While the orzo is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute. Add sliced asparagus and cherry tomatoes, cooking until asparagus is tender and tomatoes are slightly blistered, about 5-7 minutes. Season with salt and pepper.

Cook the Mahi-Mahi
Season the mahi-mahi fillet with lemon pepper seasoning. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the mahi-mahi fillet and cook for 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Combine and Serve
Once the orzo is cooked, drain it and mix it with the sautéed vegetables. Add lemon juice and stir well. Serve the orzo mixture on a plate and place the mahi-mahi fillet on top.
