Prepare the Beef Patty
In a bowl, season the ground beef with salt and black pepper. Form into a half-pound patty.

Sauté Onions and Chiles
In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onion and sauté until translucent. Add the Hatch green chiles and cook for an additional 2-3 minutes until heated through.

Cook the Patty
In another skillet, heat the remaining tablespoon of butter over medium-high heat. Add the beef patty and cook for about 4-5 minutes on each side, or until it reaches your desired level of doneness.

Assemble the Patty Melt
Once the patty is cooked, place it on a slice of bread. Top with the sautéed onions and green chiles, followed by the Monterey Jack cheese. Top with the second slice of bread.

Remove from the skillet, slice in half, and serve hot.
