Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Marinate
Soak the fillets in buttermilk for at least 30 minutes to tenderize and add flavor.

Mix Dry Ingredients
In a shallow dish, combine cornmeal, flour, cajun seasoning, salt, and black pepper.

Coat the Fillets
Remove the fillets from the buttermilk, letting excess drip off, then dredge them in the cornmeal mixture, ensuring they are well coated.

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry the Catfish
Carefully place the coated fillets in the hot oil. Fry for 4-5 minutes on each side until golden brown and cooked through.

Drain
Remove the fillets from the skillet and place them on a plate lined with paper towels to drain excess oil.

Cook the french fries according to package instructions while the catfish is frying.

Serve the fried catfish fillets with tartar sauce and seasoned french fries on the side.
