Cook the Farro
In a medium saucepan, combine the farro and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes until farro is tender. Drain excess liquid if necessary.

Prepare the Bean Mixture
In a large skillet over medium heat, add the minced garlic and sauté for 1-2 minutes until fragrant. Add the canned black beans (drained and rinsed), cooked farro, cumin, smoked paprika, salt, and black pepper. Stir well and cook for an additional 5-7 minutes, allowing the flavors to meld.

Make Corn Relish
In a small bowl, combine 1 cup of corn (canned or fresh), diced red onion, cilantro, lime juice, and salt to taste. Mix well and set aside.

Prepare Tacos
Warm taco shells or tortillas in a dry skillet or microwave. Fill each shell with the black bean and farro mixture, top with corn relish, pico de gallo, diced avocado, and a squeeze of lime juice.
