Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent. Stir in green chiles, cumin, salt, and black pepper.

Combine with Crab
Once the onion is translucent, add the cream cheese and mix until melted and well combined. Gently fold in the blue crab meat and half of the cheddar cheese. Remove from heat.

Fill the Tortillas
Preheat your oven to 375°F (190°C). Take a blue corn tortilla, add a generous scoop of the crab mixture, and roll it up tightly. Place seam-side down in a greased baking dish. Repeat with remaining tortillas.

Prepare the Sauce
In a bowl, mix the sour cream with the remaining cheddar cheese. Spread this mixture evenly over the top of the rolled enchiladas.

Serve
Remove from the oven, let cool for a few minutes, then serve warm with additional sour cream or green salsa if desired.
