Prepare the Shrimp
Preheat a skillet over medium-high heat. Toss the shrimp with blackening seasoning until well coated. Cook the shrimp in the skillet for 2-3 minutes on each side until they are opaque and cooked through. Remove from heat and set aside.

Make the Cilantro Slaw
In a bowl, combine shredded cabbage, cilantro, lime juice, and mayonnaise. Mix well until the cabbage is coated. Season with salt and pepper to taste.

Prepare Corn Pico de Gallo
In another bowl, combine corn, diced tomatoes, red onion, and lime juice. Mix well and season with salt to taste.

Make Chipotle Cream Sauce
In a small bowl, mix together mayonnaise and chipotle in adobo sauce until smooth. Adjust seasoning to taste.

Assemble the Tacos
Warm the corn tortillas in a dry skillet or microwave. Add a portion of blackened shrimp, top with cilantro slaw, corn pico de gallo, and drizzle with chipotle cream sauce. Serve with charro black beans on the side.
