    Make the Tartar Sauce

    In a bowl, mix together mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Adjust seasoning with salt and pepper. Refrigerate until serving.

    Prepare the Fries

    Peel the russet potatoes and cut them into thin strips. Rinse in cold water and pat dry with paper towels.

    Fry the Fries

    Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    In a mixing bowl, combine flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the Aggie 1888 beer until smooth.

    Fry the Fish

    Dip each piece of fish into the beer batter, allowing excess to drip off, then carefully place in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
