Whipped Feta Cheese

    Prepare the Feta Mixture

    In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, and garlic clove. Blend until smooth and creamy.

    Season the Mixture

    Add black pepper and salt to taste. Blend again briefly to combine. Transfer to a serving bowl.

Pistachio Dukkah

    Toast the Spices

    In a dry skillet over medium heat, toast the coriander seeds, cumin seeds, and sesame seeds until fragrant, about 3-4 minutes. Stir frequently to avoid burning.

    Blend the Dukkah

    Remove the toasted seeds from heat and let them cool slightly. In a food processor, combine the toasted seeds with pistachios and blend until coarsely ground. Season with salt to taste.

Charred Blood Orange

    Prepare the Oranges

    Preheat a grill or grill pan over medium-high heat. Slice the blood oranges in half.

    Char the Oranges

    Brush the cut sides of the blood oranges with olive oil and sprinkle with salt. Place the oranges cut-side down on the grill and cook for about 3-4 minutes until charred.

    Remove from Grill

    Remove the charred oranges from the grill and let them cool slightly before serving.

Pita Bread

    Warm the Pita

    Warm the pita bread on the grill for about 1-2 minutes on each side until soft and slightly toasted.
