Prepare the cheese mixture
In a large mixing bowl, crumble the feta and kefalotyri cheese. Add the chopped parsley, salt, and pepper, then mix well.

Fry the croquettes
In a large frying pan, heat the olive oil over medium heat. Once hot, add the croquettes in batches, being careful not to overcrowd the pan. Fry until golden brown on all sides, approximately 3-4 minutes per batch. Remove and drain on paper towels.
Almond Romesco

Blend the romesco sauce
In a food processor, combine the toasted almonds, roasted red peppers, minced garlic, red wine vinegar, smoked paprika, and salt. Pulse until combined, then slowly drizzle in the olive oil while blending until smooth.
Dried Fruit Chutney

Cook the chutney
In a saucepan, combine the chopped dried apricots, figs, brown sugar, cinnamon, and water. Bring to a simmer over medium heat and cook for about 15 minutes or until thickened. Stir in lemon juice and remove from heat.
Spiced Honey

In a small bowl, combine honey, cinnamon, and chili flakes. Stir well until fully mixed.
