    Prepare the Steak

    Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes.

    Season the Steak

    Generously season both sides of the steaks with salt and black pepper.

    Cook the Steak

    Heat a skillet or grill pan over medium-high heat. Add olive oil and allow it to heat until shimmering. Place the steaks in the pan and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Fries

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt while hot.

Aioli

    Prepare the Aioli

    In a small bowl, combine mayonnaise, minced garlic cloves, and lemon juice. Mix well until smooth.

    Season the Aioli

    Add salt and black pepper to taste, adjusting seasoning as necessary. Refrigerate until ready to serve.
