Marinate the Steak
Place the skirt steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Prepare the Potatoes
Peel and dice the russet potatoes into bite-sized cubes.

Cook the Potatoes
In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with paprika, garlic powder, and salt. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden and crispy.

Cook the Eggs
In a non-stick skillet, melt the butter over medium heat. Pour the egg mixture into the skillet and gently stir with a spatula until the eggs are just set and slightly creamy, about 3-4 minutes.
